- 1 pound ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14.5 ounces) diced tomatoes
- 1 can (14.5 ounces) beef broth
- 1 cup uncooked long-grain white rice
Directions
- In a large skillet, cook the beef, onion, bell pepper, and garlic over medium-high heat until the beef is browned, about 8 minutes. Drain the fat.
- Add the chili powder, cumin, paprika, oregano, salt, and pepper. Cook and stir for 1 minute.
- Stir in the diced tomatoes, beef broth, and rice. Bring to a boil, reduce heat to low, and simmer covered for 20 minutes, or until the rice is cooked.
- Serve hot.
