Ingredients
- 1 lb. Venison
- 1 tbsp Olive Oil
- 2 cloves Garlic, minced
- 1 Onion, diced
- 1 Carrot, chopped
- 1 Celery Stalk, chopped
- 1 tsp Dried Thyme
- 1 tsp Dried Oregano
- 2 tsp Dried Parsley
- 1/4 tsp Ground Black Pepper
- 1/4 tsp Salt
- 1 Bay Leaf
- 2 cups Beef Broth
- 1/2 cup Red Wine
- 1/2 cup Frozen Peas
Directions
- In a large pot, heat the oil over medium-high heat.
- Add the garlic, onion, carrot, and celery, and sauté for 5 minutes.
- Add the venison, thyme, oregano, parsley, salt, pepper, and bay leaf, and sauté for an additional 5 minutes.
- Add the beef broth and red wine, and bring the stew to a boil.
- Reduce the heat to low and simmer for 30 minutes.
- Add the frozen peas and simmer for an additional 15 minutes.
- Serve hot and enjoy!
