Ingredients

  • 1 lb. Venison
  • 1 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 1 Onion, diced
  • 1 Carrot, chopped
  • 1 Celery Stalk, chopped
  • 1 tsp Dried Thyme
  • 1 tsp Dried Oregano
  • 2 tsp Dried Parsley
  • 1/4 tsp Ground Black Pepper
  • 1/4 tsp Salt
  • 1 Bay Leaf
  • 2 cups Beef Broth
  • 1/2 cup Red Wine
  • 1/2 cup Frozen Peas

Directions

  1. In a large pot, heat the oil over medium-high heat.
  2. Add the garlic, onion, carrot, and celery, and sauté for 5 minutes.
  3. Add the venison, thyme, oregano, parsley, salt, pepper, and bay leaf, and sauté for an additional 5 minutes.
  4. Add the beef broth and red wine, and bring the stew to a boil.
  5. Reduce the heat to low and simmer for 30 minutes.
  6. Add the frozen peas and simmer for an additional 15 minutes.
  7. Serve hot and enjoy!
