Ingredients

  • 4 egg whites
  • 1/4 teaspoon cream of tartar
  • 1 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 tablespoon powdered sugar
  • 2 tablespoons fresh lemon juice
  • Fresh fruit, for serving

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, beat egg whites and cream of tartar until soft peaks form.
  3. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form.
  4. Gently fold in vanilla extract.
  5. Spoon mixture into a 9-inch pie plate. Bake in preheated oven for 10 minutes, or until lightly browned.
  6. In a large bowl, beat cream until stiff peaks form. Gradually add powdered sugar, lemon juice, and vanilla extract, beating until blended.
  7. Spread cream mixture over meringue.
  8. Chill for at least 1 hour before serving.
  9. Serve with fresh fruit.
