Ingredients

  • 1 cup peanut butter
  • 1/2 cup butter, melted
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Directions

  1. In a medium bowl, combine the peanut butter, melted butter and powdered sugar. Mix until fully combined and the mixture is smooth.
  2. Add the vanilla extract and mix until combined. Set aside.
  3. Line a 12-cup muffin tin with paper liners. Divide the peanut butter mixture into 12 equal portions and press into the bottom of the liners.
  4. In a double boiler or microwave, melt the chocolate chips and vegetable oil until smooth. Divide the melted chocolate evenly among the muffin tin, covering the peanut butter.
  5. Place in the refrigerator for at least 30 minutes to allow the cups to set.
