Ingredients
- 1 cup peanut butter
- 1/2 cup butter, melted
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 1 tablespoon vegetable oil
Directions
- In a medium bowl, combine the peanut butter, melted butter and powdered sugar. Mix until fully combined and the mixture is smooth.
- Add the vanilla extract and mix until combined. Set aside.
- Line a 12-cup muffin tin with paper liners. Divide the peanut butter mixture into 12 equal portions and press into the bottom of the liners.
- In a double boiler or microwave, melt the chocolate chips and vegetable oil until smooth. Divide the melted chocolate evenly among the muffin tin, covering the peanut butter.
- Place in the refrigerator for at least 30 minutes to allow the cups to set.
