Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno pepper, diced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 4 cups chicken broth
- 2 cups water
- 2 cups diced carrots
- 2 cups diced potatoes
- 2 cups diced tomatoes
- 2 cups cooked chicken, diced
- 1/4 cup chopped cilantro
Directions
- Heat the oil in a large pot over medium-high heat. Add the onion, garlic, and jalapeno pepper and cook until softened.
- Add the chili powder, cumin, paprika, oregano, cayenne pepper, and salt and stir to combine.
- Add the chicken broth and water and bring to a boil.
- Add the carrots, potatoes, and tomatoes and return to a boil. Reduce the heat to low and simmer for 20 minutes or until the vegetables are tender.
- Stir in the chicken and cilantro and simmer for an additional 5 minutes.
- Serve hot.
