Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14.5 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) corn, drained
  • 1 can (4 oz) diced green chiles
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1/2 cup salsa
  • 1/2 cup plain Greek yogurt
  • Optional toppings: shredded cheese, avocado, sour cream, cilantro, etc.

Directions

  1. Place chicken in the slow cooker.
  2. Add tomatoes, beans, corn, chiles, taco seasoning, and water to the slow cooker.
  3. Stir to combine.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender.
  5. When chicken is cooked, use a fork to shred the chicken in the slow cooker.
  6. Stir in salsa and yogurt.
  7. Serve with desired toppings.
