Ingredients
- 1 lb boneless skinless chicken breasts
- 1 can (14.5 oz) diced tomatoes
- 1 can (14.5 oz) black beans, rinsed and drained
- 1 can (14.5 oz) corn, drained
- 1 can (4 oz) diced green chiles
- 1 packet taco seasoning mix
- 1/2 cup water
- 1/2 cup salsa
- 1/2 cup plain Greek yogurt
- Optional toppings: shredded cheese, avocado, sour cream, cilantro, etc.
Directions
- Place chicken in the slow cooker.
- Add tomatoes, beans, corn, chiles, taco seasoning, and water to the slow cooker.
- Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender.
- When chicken is cooked, use a fork to shred the chicken in the slow cooker.
- Stir in salsa and yogurt.
- Serve with desired toppings.
