Ingredients
4 pork chops
2 tablespoons fennel seeds
2 teaspoons garlic powder
1 teaspoon onion powder

Directions
In a small bowl, mix together the fennel seeds, garlic powder, onion powder, smoked paprika, salt and pepper.
Rub the mixture onto the pork chops.
In a large skillet, heat the olive oil over medium-high heat.
Add the pork chops and cook for 4-5 minutes per side, or until cooked through.
Remove the pork chops from the skillet and set aside.
Add the sweet potato, apple and kale to the skillet and cook for 5 minutes, stirring occasionally.
Add the apple juice and cook for an additional 2-3 minutes.
Return the pork chops to the skillet and cook for 2-3 minutes more, or until everything is heated through.
Serve warm.

Sweet potatoes are a great source of vitamin A, vitamin C, dietary fiber and potassium.
Kale is also high in vitamins A and C and dietary fiber.
