Fennel-Rubbed Pork Chops with Apple Kale and Sweet Potato

Ingredients

  • 4 pork chops
  • 2 tablespoons fennel seeds
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 sweet potato, peeled and cut into 1-inch cubes
  • 1 apple, cored and cut into 1-inch cubes
  • 2 cups kale, chopped
  • 1/4 cup apple juice

Directions

  1. In a small bowl, mix together the fennel seeds, garlic powder, onion powder, smoked paprika, salt and pepper.
  2. Rub the mixture onto the pork chops.
  3. In a large skillet, heat the olive oil over medium-high heat.
  4. Add the pork chops and cook for 4-5 minutes per side, or until cooked through.
  5. Remove the pork chops from the skillet and set aside.
  6. Add the sweet potato, apple and kale to the skillet and cook for 5 minutes, stirring occasionally.
  7. Add the apple juice and cook for an additional 2-3 minutes.
  8. Return the pork chops to the skillet and cook for 2-3 minutes more, or until everything is heated through.
  9. Serve warm.
