- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 green onions, thinly sliced
- 2 cloves garlic, minced
- 1/2 teaspoon baking powder
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- 2 tablespoons olive oil, for frying
Directions
- Place the grated zucchini in a colander set over a bowl. Sprinkle with salt and let it sit for 10 minutes to draw out the excess moisture.
- After 10 minutes, squeeze the zucchini to remove as much liquid as possible.
- In a large mixing bowl, combine the grated zucchini, flour, Parmesan cheese, green onions, garlic, baking powder, black pepper, and eggs. Stir well to combine all the ingredients.
- Heat the olive oil in a skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot skillet. Flatten each spoonful with the back of a spoon to form a fritter.
- Cook the fritters for 2-3 minutes on each side until golden brown and crispy.
- Transfer the cooked fritters to a paper towel-lined plate to drain excess oil.
- Repeat the process with the remaining zucchini mixture until all the fritters are cooked.
- Serve the zucchini fritters hot with your favorite dipping sauce or as a side dish.
- Enjoy!
