Ingredients

  • 1 medium-sized spaghetti squash
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced

  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds and membranes using a spoon.
  3. Brush the cut sides with olive oil and place them cut-side down on a baking sheet.
  4. Bake the squash in the preheated oven for 35-45 minutes, or until the flesh easily separates into strands with a fork. Set aside to cool.
  5. In a skillet, heat the remaining olive oil over medium heat. Add the chopped onion and garlic, and cook until softened and fragrant, about 5 minutes.
  6. Add the chopped spinach and cherry tomatoes to the skillet and cook for an additional 2 minutes, until the spinach wilts.
