Ingredients

  • 1 head of cauliflower, chopped into small florets
  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/2 teaspoon sea salt
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1 jalapeño, seeded and minced
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped red onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped olives

Directions

  1. In a large bowl, combine the cauliflower florets, lime juice, olive oil, sea salt, garlic, cumin, and jalapeño.
  2. Toss to coat the cauliflower evenly.
  3. Cover the bowl and let the cauliflower marinate in the refrigerator for at least 20 minutes.
  4. After marinating, add the cilantro, red onion, bell pepper, tomatoes, and olives to the bowl and toss to combine.
  5. Serve chilled or at room temperature.
