Ingredients
- 1 head of cauliflower, chopped into small florets
- 1/2 cup fresh lime juice
- 1/4 cup olive oil
- 1/2 teaspoon sea salt
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1 jalapeño, seeded and minced
- 1/2 cup chopped cilantro
- 1/4 cup chopped red onion
- 1/4 cup chopped bell pepper
- 1/4 cup chopped tomatoes
- 1/4 cup chopped olives
Directions
- In a large bowl, combine the cauliflower florets, lime juice, olive oil, sea salt, garlic, cumin, and jalapeño.
- Toss to coat the cauliflower evenly.
- Cover the bowl and let the cauliflower marinate in the refrigerator for at least 20 minutes.
- After marinating, add the cilantro, red onion, bell pepper, tomatoes, and olives to the bowl and toss to combine.
- Serve chilled or at room temperature.
