Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 head of broccoli, chopped
  • 1 cup of cheddar cheese, grated
  • 6 large eggs
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
    • Directions

      1. Preheat the oven to 350 degrees F.
      2. Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and broccoli and cook for about 5 minutes, stirring occasionally. Remove from heat and set aside.
      3. In a large bowl, whisk together the eggs, salt, and pepper. Add the cooked vegetables and grated cheese and mix everything together.
      4. Pour the mixture into a greased 9-inch baking dish and bake for 25 minutes, or until the frittata is set and the top is golden brown.
      5. Let cool for a few minutes before serving.
