Ingredients

  • For the cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the cream filling:
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • For the chocolate ganache:
  • 1 cup heavy cream
  • 8 ounces semisweet chocolate, chopped
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed until well combined. Stir in the boiling water, the batter will be thin.
  4. Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  5. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  6. While the cakes are cooling, make the cream filling. In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  7. Once the cakes have cooled, place one cake layer on a serving platter. Spread the cream filling evenly over the top of the first layer. Place the second cake layer on top.
  8. To make the ganache, heat the heavy cream in a saucepan over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate, butter, and vanilla extract. Stir until smooth and well combined.
  9. Pour the ganache over the cake, allowing it to drip down the sides. Use a spatula to spread the ganache evenly. Refrigerate the cake for at least 1 hour to set before serving. Enjoy!
