Ingredients

- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- For the cream filling:
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- For the chocolate ganache:
- 1 cup heavy cream
- 8 ounces semisweet chocolate, chopped
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
Directions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Add milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed until well combined. Stir in the boiling water, the batter will be thin.
- Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
- While the cakes are cooling, make the cream filling. In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Once the cakes have cooled, place one cake layer on a serving platter. Spread the cream filling evenly over the top of the first layer. Place the second cake layer on top.
- To make the ganache, heat the heavy cream in a saucepan over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate, butter, and vanilla extract. Stir until smooth and well combined.
- Pour the ganache over the cake, allowing it to drip down the sides. Use a spatula to spread the ganache evenly. Refrigerate the cake for at least 1 hour to set before serving. Enjoy!
