Ingredients
- 4 medium potatoes
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon white vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow bell pepper
- 1/2 cup diced cucumber
- 2 green onions, thinly sliced
- 1/4 cup chopped fresh parsley
Directions
- Peel the potatoes and cut them into bite-sized cubes. Place them in a pot of salted boiling water and cook until tender, about 10-12 minutes. Drain and let cool.
