Ingredients

  • 1 cup spelt flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/4 cup almond milk
  • 1/4 cup vegan chocolate chips

Directions

  1. Preheat oven to 375°F and lightly grease a 12-cup muffin tin with nonstick cooking spray.
  2. In a medium bowl, whisk together the spelt flour, baking powder and salt.
  3. In a separate bowl, mix together the maple syrup, applesauce, vanilla extract and almond milk.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Stir in the vegan chocolate chips.
  6. Divide the muffin batter evenly among the 12-cup muffin tin.
  7. Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool the muffins in the tin for 10 minutes before transferring them to a wire rack to cool completely.
