- 1/4 cup maple syrup

Directions
- Preheat oven to 375°F and lightly grease a 12-cup muffin tin with nonstick cooking spray.
- In a medium bowl, whisk together the spelt flour, baking powder and salt.
- In a separate bowl, mix together the maple syrup, applesauce, vanilla extract and almond milk.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Stir in the vegan chocolate chips.
- Divide the muffin batter evenly among the 12-cup muffin tin.
- Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool the muffins in the tin for 10 minutes before transferring them to a wire rack to cool completely.
