Ingredients

  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 1 ½ cups gluten-free all-purpose flour
  • ½ cup almond flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup coconut sugar
  • ¼ cup melted coconut oil
  • ¾ cup plant-based milk (such as almond or soy milk)
  • ¼ cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 tablespoon poppy seeds
  • 1 teaspoon vanilla extract

Directions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a small bowl, mix ground flaxseed and water. Let it sit for 5 minutes to thicken.
  3. In a large mixing bowl, combine gluten-free all-purpose flour, almond flour, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk together the thickened flaxseed mixture, coconut sugar, melted coconut oil, plant-based milk, lemon juice, lemon zest, poppy seeds, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix as it can result in dense muffins.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
  9. Enjoy these delicious Vegan and Gluten-Free Lemon Poppy Seed Muffins!
