They are easy to make and will fill your home with their irresistible aroma while baking. Enjoy them warm or at room temperature with a spread of butter or cream cheese.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, melted
  • 1/2 cup molasses
  • 1/2 cup milk
  • 2 eggs
  • 1 1/2 cups raisins

Directions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease each cup with butter or cooking spray.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In a separate bowl, mix together the melted butter, molasses, milk, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
  5. Fold in the raisins.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
  9. Serve the muffins warm or at room temperature. Enjoy!
