Ingredients

  • 1 whole turkey (12-14 pounds)
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons chopped fresh herbs (such as rosemary, thyme, and sage)
  • Salt and pepper to taste
  • 1 onion, quartered
  • 1 lemon, quartered
  • 4 cloves garlic, peeled
  • 2 cups chicken broth

Directions

  1. Preheat the oven to 325°F.
  2. Rinse the turkey inside and out, pat dry with paper towels.
  3. In a small bowl, mix the softened butter with chopped herbs, salt, and pepper.
  4. Carefully loosen the skin of the turkey and rub the herb butter mixture under the skin and all over the turkey.
  5. Stuff the turkey cavity with onion, lemon, and garlic.
  6. Place the turkey on a rack in a roasting pan, breast side up.
  7. Pour chicken broth into the bottom of the roasting pan.
  8. Cover the turkey with foil and roast for 2 hours.
  9. Remove the foil and continue roasting for another 2 hours, basting the turkey every 30 minutes with the pan juices.
  10. Check the temperature with a meat thermometer - it should read 165°F in the thickest part of the thigh.
  11. Once done, remove the turkey from the oven and let it rest for 20 minutes before carving.
  12. Serve with gravy and enjoy your Thanksgiving feast!
