Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/4 cup creamy peanut butter
- 2 tablespoons rice vinegar
- 2 teaspoons sesame oil
- 1 teaspoon Sriracha sauce
- 4 large tortillas
- 2 cups shredded lettuce
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped peanuts
Directions
- In a resealable plastic bag, combine soy sauce, lime juice, honey, minced garlic, and grated ginger. Add the chicken breasts to the bag, seal, and marinate in the refrigerator for at least 15 minutes.
- Preheat grill to medium-high heat. Remove the chicken breasts from the marinade and discard the marinade. Grill the chicken for 6-8 minutes per side, or until cooked through. Remove from the grill and let it rest for a few minutes before slicing into thin strips.
