Ingredients
- 2 acorn squashes
- 1 tablespoon olive oil
- 6 slices of turkey bacon, chopped
- 1 small onion, diced
- 8 oz mushrooms, chopped
- 2 cloves of garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
Directions
- Preheat the oven to 400°F.
- Cut the acorn squash in half lengthwise and scoop out the seeds.
- Brush the cut sides of the squash with olive oil and season with salt and pepper.
- Place the squash halves cut side down on a baking sheet and roast for 30-40 minutes, until tender.
- In a skillet, cook the chopped turkey bacon until crispy. Remove from the skillet and set aside.
- In the same skillet, sauté the onion until translucent. Add the mushrooms, garlic, thyme, sage, salt, and pepper. Cook until the mushrooms are tender.
- Stir in the breadcrumbs, cooked turkey bacon, and Parmesan cheese. Mix well.
- Remove the roasted squash from the oven and carefully flip them over.
- Fill each squash half with the mushroom and turkey bacon stuffing.
- Return the stuffed squash to the oven and bake for an additional 10-15 minutes, until the stuffing is golden brown.
