Ingredients

  • 1 pound salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small tortillas
  • 1 mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, seeded and minced
  • 1 lime, juiced
  • 1/2 avocado, diced
  • Optional toppings: sour cream, shredded lettuce

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Rub the salmon fillets with olive oil and sprinkle with chili powder, cumin, garlic powder, salt, and black pepper. Place the salmon on a baking sheet and bake for 12-15 minutes, or until cooked through and flaky.
