  • 4 ears of fresh corn
  • 2 jalapeno peppers
  • 2 tomatoes, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin powder

Directions

  1. Preheat the oven to 450°F and line a baking sheet with foil.
  2. Place the corn ears and jalapeno peppers on the prepared baking sheet.
  3. Roast in the oven for about 15-20 minutes, turning them occasionally, until the corn is lightly charred and the peppers are blistered.
  4. Remove the corn and peppers from the oven and let them cool for a few minutes.
  5. Once cool enough to handle, cut the corn kernels off the cobs and transfer them to a large mixing bowl.
  6. Peel the skin off the jalapenos, remove the seeds, and finely chop them. Add them to the bowl with the corn.
  7. Add the diced tomatoes, chopped red onion, cilantro, lime juice, minced garlic, salt, black pepper, and cumin powder to the bowl.
  8. Mix well until all the ingredients are evenly combined.
  9. Taste and adjust the seasonings if needed.
  10. Cover the bowl and refrigerate the salsa for at least 30 minutes to allow the flavors to meld together.
  11. Serve chilled and enjoy with tortilla chips or as a topping for your favorite dishes.
