Ingredients

  • 4 river fish fillets
  • 6 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded cheddar cheese
  • Fresh parsley, for garnish

Directions

  1. In a bowl, whisk together the eggs, milk, salt, and black pepper.
  2. Heat 1 tablespoon of butter in a skillet over medium heat.
  3. Add the diced onions and bell peppers to the skillet and cook until they are softened, about 2-3 minutes.
  4. Add the river fish fillets to the skillet and cook for about 4-5 minutes on each side until they are cooked through and easily flake with a fork.
  5. Remove the fish from the skillet and set aside.
  6. In the same skillet, melt another tablespoon of butter.
  7. Pour the egg mixture into the skillet, tilting the pan to evenly distribute the eggs.
  8. Cook the eggs for about 2-3 minutes until they start to set.
  9. Gently lift the edges of the omelet with a spatula and tilt the skillet to allow the uncooked eggs to flow to the edges.
  10. Once the omelet is mostly set but still slightly runny on top, sprinkle the diced tomatoes, cooked river fish, and shredded cheddar cheese over one half of the omelet.
  11. Carefully fold the other half of the omelet over the filling.
  12. Cook for an additional 1-2 minutes until the cheese is melted and the omelet is fully set.
  13. Slide the omelet onto a serving plate.
  14. Garnish with fresh parsley and serve hot.
