Ingredients
- 1 ripe pineapple, peeled, cored, and diced
- 2 ripe mangoes, peeled, pitted, and diced
- 1 medium red onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon grated ginger
- 1 cup brown sugar
- 1 cup apple cider vinegar
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt to taste
Directions
- In a large saucepan, combine the diced pineapple, mangoes, red onion, garlic, ginger, brown sugar, apple cider vinegar, ground cumin, ground coriander, turmeric powder, and cayenne pepper (if using).
- Place the saucepan over medium heat and bring the mixture to a boil. Reduce the heat to low and let it simmer uncovered for about 20-25 minutes, stirring occasionally, until the chutney thickens and the fruits are soft.
- Taste the chutney and add salt according to your preference. Remove from heat and let it cool completely before transferring to a clean, sterilized jar.
- Store the chutney in the refrigerator for up to a month. The flavors will continue to develop over time, so it will taste even better after a few days.
- Serve the pineapple mango chutney alongside your favorite Indian or Asian dishes or use it as a spread on sandwiches or a topping for grilled meats.
- Enjoy!
