Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups pecans, chopped and toasted
  • 1/2 cup heavy cream
  • 1 cup light brown sugar, packed
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans, toasted and finely chopped

Directions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Fold in the chopped and toasted pecans.
  6. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  8. In a small saucepan, combine the heavy cream, light brown sugar, and unsalted butter. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Boil for 1 minute, then remove from heat.
  9. Stir in the vanilla extract and finely chopped pecans. Allow the praline glaze to cool and thicken slightly.
  10. Once the glaze has thickened, drizzle it over the cooled cookies. Let the glaze set for about 30 minutes before serving.
