Ingredients

  • 4 Mahi Mahi fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup jasmine rice
  • 1 can (14 ounces) coconut milk
  • 1 cup water
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, diced
  • 1 jalapeno pepper, seeded and diced
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Season Mahi Mahi fillets with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add Mahi Mahi fillets to the skillet and cook for 4-5 minutes per side until golden brown and cooked through.
