Ingredients

  • 1 medium-sized cabbage
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, thinly sliced
  • 1 scotch bonnet pepper or jalapeno, seeded and minced (optional, for heat)
  • 2 tomatoes, diced
  • 1 teaspoon thyme leaves
  • 1 teaspoon paprika
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup coconut milk
  • 2 tablespoons chopped fresh parsley

Directions

  1. Remove the tough outer leaves of the cabbage, then cut it in half and remove the core. Slice the cabbage into thin strips.
  2. In a large skillet or pan, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until they turn translucent and aromatic.
  3. Add the sliced bell pepper and minced scotch bonnet pepper or jalapeno (if using) to the skillet. Sauté for a couple of minutes to soften the peppers.
  4. Add the diced tomatoes, thyme leaves, paprika, sugar, salt, and black pepper to the skillet. Stir well to combine the ingredients.
  5. Add the sliced cabbage to the skillet and toss it with the spice mixture until it is well-coated.
  6. Cover the skillet and let the cabbage cook for about 10 minutes, stirring occasionally, until it has wilted and become tender.
  7. Pour in the coconut milk and stir it into the cabbage. Cook for an additional 2-3 minutes to heat through.
  8. Remove the skillet from heat and sprinkle chopped fresh parsley over the cabbage as a garnish.
  9. Serve the Jamaican cabbage hot as a side dish or as a main course with rice and beans or roasted chicken. Enjoy!
