These Honey Dijon Chicken Thighs are a perfect combination of sweet and tangy flavors. The chicken thighs are marinated in a mouthwatering blend of honey, Dijon mustard, garlic, and herbs, and then baked to perfection. This recipe is simple to prepare and is a crowd-pleaser. Serve it with your favorite side dishes for a complete and satisfying meal.

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the honey, Dijon mustard, minced garlic, dried thyme, dried rosemary, paprika, salt, and black pepper.
  3. Place the chicken thighs in a shallow dish and pour the marinade over them. Make sure each piece is well coated. Let them marinate for at least 30 minutes, or up to 24 hours in the refrigerator.
  4. Heat a large oven-safe skillet over medium-high heat. Once hot, add the chicken thighs skin side down and cook for 4-5 minutes, until golden brown and crispy.
  5. Flip the thighs over and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  6. Remove the skillet from the oven and let the chicken rest for a few minutes before serving. Garnish with chopped fresh parsley and serve hot.

Interesting Facts

  • Chicken thighs are more forgiving than chicken breasts and tend to stay moist and flavorful when cooked.
  • The honey and Dijon mustard combo creates a tasty glaze that caramelizes beautifully on the chicken thighs.
  • You can also grill the marinated chicken thighs instead of baking them in the oven for a smoky flavor.
