Ingredients

  • 4 pounds ground beef chuck
  • 1 pound ground pork fat
  • 1/2 cup red wine

  • 1 teaspoon fennel seeds
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon curing salt
  • Cheesecloth

Directions

  1. In a large mixing bowl, combine the ground beef chuck, ground pork fat, red wine, minced garlic, kosher salt, black pepper, paprika, fennel seeds, cayenne pepper, and curing salt. Mix well until all the ingredients are evenly incorporated.
  2. Divide the mixture into 2 equal portions and shape each portion into a log shape. Wrap each log in cheesecloth, making sure it is tightly secured.
  3. Place the wrapped logs on a wire rack set over a baking sheet to catch any drippings. Let the logs sit at room temperature for about 2 hours to allow the flavors to meld.
  4. Preheat your oven to 180°F (82°C). Once preheated, place the wire rack with the wrapped logs in the oven and bake for 2-3 hours or until the internal temperature reaches 160°F (71°C).
  5. Remove the logs from the oven and let them cool completely. Once cooled, refrigerate the salami logs for at least 24 hours to allow them to firm up and develop their taste.
  6. After the refrigeration period, remove the cheesecloth from the salami logs. The homemade salami is now ready to be sliced and enjoyed! Store any leftovers in the refrigerator for up to 2 weeks.
