  • 2 ripe avocados
  • 1 small red onion, finely chopped
  • 1 medium tomato, diced
  • 1/2 cucumber, peeled and diced
  • 1/4 cup Kalamata olives, pitted and chopped
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste


  1. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
  2. Mash the avocados with a fork until creamy but still slightly chunky.
  3. Add the chopped red onion, diced tomato, diced cucumber, Kalamata olives, lemon juice, and olive oil to the bowl.
  4. Mix well to combine all the ingredients.
  5. Gently fold in the crumbled feta cheese and fresh parsley.
