Ingredients
- 2 pounds of potatoes
- 2 cups all-purpose flour
- 1 large egg
- Salt
- Pepper

- 4 cloves of garlic, minced
- 1 pint cherry tomatoes
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese

- Boil the potatoes until they are fork-tender. Once cooked, peel and mash them in a large bowl.
- Add the flour, egg, salt, and pepper to the mashed potatoes. Mix well until everything is combined and a dough starts to form.
- Transfer the dough to a floured surface and knead it gently for a few minutes until it becomes smooth.
- Divide the dough into smaller portions and roll each portion into a long rope about 1/2 inch thick.
