Ingredients
- 8 oz. gluten-free rice noodles
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1/2 cup shredded carrots
- 3 green onions, chopped
- 1/4 cup gluten-free soy sauce
- 2 tbsp. fish sauce
- 2 tbsp. honey
- 1/4 cup peanuts, crushed
- 2 tbsp. vegetable oil
- 1 lime, cut into wedges
Directions
- Cook rice noodles according to package instructions. Drain and set aside.
- In a large skillet, heat vegetable oil over medium-high heat. Add chicken and cook until no longer pink.
- Add garlic, bell pepper, carrots, and green onions to the skillet. Cook until vegetables are tender.
- In a small bowl, whisk together soy sauce, fish sauce, and honey. Pour over chicken and vegetables in the skillet.
- Add cooked rice noodles to the skillet and toss everything together until well combined.
- Serve hot, garnished with crushed peanuts and lime wedges.
