Ingredients

  • 8 ounces linguine pasta
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste

Directions

  1. Cook the linguine pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes until pink and cooked through. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until softened.
  5. Reduce the heat to low and add the heavy cream and crumbled feta cheese to the skillet. Stir until the cheese is melted and the sauce is creamy.
  6. Add the cooked linguine pasta to the skillet and toss to coat the pasta with the creamy sauce.
  7. Return the cooked shrimp to the skillet and gently combine with the pasta.
  8. Season with salt and pepper to taste. Garnish with fresh basil.
