Ingredients

  • 1 whole duck (about 4-5 pounds)
  • 2 oranges
  • 4 cloves of garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup orange juice
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 teaspoon ginger, grated
  • 1 teaspoon cornstarch
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Remove the giblets from the duck cavity and rinse the duck under cold water. Pat dry with paper towels.
  3. Season the duck with salt and pepper, both inside and out.
  4. Zest the oranges and set aside the zest for later use. Squeeze the juice from the oranges.
  5. In a small bowl, whisk together the minced garlic, soy sauce, orange juice, honey, rice vinegar, and grated ginger.
