Ingredients

  • 4 veal cutlets
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste

  • 1/2 cup chicken broth
  • 1 tablespoon fresh lemon juice

Directions

  1. Place the flour in a shallow dish and season with salt and pepper. Dredge the veal cutlets in the flour mixture, shaking off any excess.
  2. In a large skillet, melt 2 tablespoons of butter with the olive oil over medium-high heat. Add the veal cutlets to the skillet and cook for about 2 minutes on each side until golden brown. Remove the veal from the skillet and set aside.
