Ingredients

  • 1 lb (450g) large prawns, deveined and shelled
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice wine or dry sherry
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper powder
  • 2 green onions, thinly sliced
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Fresh cilantro leaves for garnish

Directions

  1. In a small bowl, combine the minced garlic, soy sauce, oyster sauce, rice wine or dry sherry, sesame oil, sugar, and white pepper powder. Mix well to make the garlic sauce.
  2. Place the prawns in a steamer basket and pour the garlic sauce over them. Toss to evenly coat the prawns with the sauce.
  3. Bring water to a boil in a steamer pot. Once the water is boiling, carefully place the steamer basket with the prawns into the pot. Cover and steam for 8-10 minutes, or until the prawns are cooked through and slightly pink.
  4. While the prawns are steaming, mix the cornstarch and water in a small bowl to create a slurry.
  5. Remove the steamer basket from the pot and transfer the steamed prawns to a serving dish. Pour the steamed prawn juices into a small pot and bring to a boil. Once boiling, stir in the cornstarch slurry until the sauce thickens.
  6. Pour the thickened sauce over the steamed prawns and garnish with sliced green onions and fresh cilantro leaves.
