Ingredients

  • 4 halibut fillets (6 ounces each)
  • 8 sheets phyllo pastry
  • 6 tablespoons unsalted butter, melted
  • Salt and pepper to taste

  • 2 scallions, finely chopped
  • 1 garlic clove, minced
  • 1/4 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh dill, chopped

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Season the halibut fillets with salt and pepper on both sides.
  3. Lay one sheet of phyllo pastry on a clean surface and brush with melted butter. Repeat with another sheet of phyllo pastry, brushing with butter. Continue until you have 4 sheets of phyllo pastry.
  4. Place a seasoned halibut fillet on one end of the layered phyllo sheets and roll it up tightly, tucking in the edges as you go. Repeat with the remaining fillets and phyllo sheets.
  5. Brush the outside of the phyllo-wrapped fillets with melted butter and place them on a baking sheet.
  6. Bake in the preheated oven for 20-25 minutes, or until the phyllo pastry is golden brown and the fish is cooked through.
  7. While the fillets are baking, prepare the lemon scallion sauce. Heat olive oil in a skillet over medium heat. Add the scallions and garlic, and sauté until fragrant.
