Ingredients

  • 8 oz Chinese wheat noodles
  • 1 lb asparagus, trimmed
  • 2 large eggs
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/2 cup scallions, thinly sliced
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Directions

  1. Cook noodles according to package instructions, then drain and set aside.
  2. Blanch asparagus in boiling water for 2 minutes, then drain and plunge into ice water. Drain and set aside.
  3. In a bowl, whisk together eggs, soy sauce, sesame oil, scallions, salt, and pepper.
  4. Heat vegetable oil in a large non-stick skillet over medium heat.
  5. Add half of the egg mixture to the skillet, swirling to coat the bottom.
  6. Cook until set, then top with half of the noodles and half of the asparagus.
  7. Fold pancake in half and cook for another minute until golden brown.
  8. Repeat with remaining ingredients to make a second pancake.
  9. Cut pancakes into wedges and serve hot.
