Ingredients

  • 4 boneless, skinless chicken breasts
  • 6 slices of bacon
  • 1 can of artichoke hearts, drained
  • 1/2 cup chicken broth
  • 2 cloves of garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions

  1. In a large skillet, cook the bacon until crispy. Remove from skillet and set aside, leaving the drippings in the pan.
  2. Season chicken breasts with salt, pepper, and dried thyme. Add olive oil to the skillet with the bacon drippings and heat over medium-high heat.
  3. Add chicken breasts to the skillet and cook for 5-6 minutes on each side, until fully cooked through.
  4. Remove chicken from skillet and set aside. In the same skillet, add minced garlic and sauté for 1 minute.
  5. Add artichoke hearts and chicken broth to the skillet, scraping up any browned bits from the bottom of the pan. Cook for 5 minutes, until artichoke hearts are heated through.
  6. Add chicken and bacon back to the skillet, stirring to combine and heat through. Serve hot and enjoy!
