Ingredients

  • 1 lb dried black beans
  • 6 cups water
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 strips bacon, chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 bay leaf
  • Salt and pepper to taste

Directions

  1. Rinse the black beans and soak them in water overnight.
  2. In a large pot, boil the soaked beans in 6 cups of water until tender, about 1-2 hours.
  3. In a skillet, cook the bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  4. Saute the onion, green pepper, and garlic in the bacon drippings until softened.
  5. Add the cumin, oregano, and bay leaf to the skillet and cook for another minute.
  6. Add the cooked beans along with some of the cooking liquid to the skillet. Let simmer for 20-30 minutes.
  7. Season with salt and pepper to taste.
  8. Serve the beans topped with the crispy bacon.
