Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
- 1 cup pineapple juice
- 1 cup long grain white rice
- 1 1/2 cups water
- 1 cup diced fresh pineapple
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Directions
- In a bowl, combine olive oil, garlic, cumin, paprika, chili powder, salt, and pepper. Add chicken breasts and coat with marinade. Refrigerate for at least 30 minutes.
- In a saucepan, combine pineapple juice, water, and rice. Bring to a boil, then reduce heat and simmer covered for 18-20 minutes.
- While rice is cooking, grill chicken on medium-high heat for 6-7 minutes per side, or until cooked through.
