Ingredients
- 200g self-raising flour

- 4 tbsp seedless raspberry jam

Directions
- Preheat the oven to 180°C (350°F) and line a muffin tin with cupcake cases.
- In a mixing bowl, cream together the softened butter and caster sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Sift the self-raising flour into the mixture and fold gently until just combined. Add the milk and mix until you achieve a smooth batter.
- Fill each cupcake case two-thirds full with the batter. Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Remove the cupcakes from the oven and transfer to a wire rack to cool completely.
- In a separate bowl, beat the softened butter until creamy. Gradually add the icing sugar and vanilla extract, beating well after each addition until you have a smooth buttercream.
