Ingredients

  • 200g self-raising flour
  • 200g unsalted butter (softened)
  • 200g caster sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 4 tbsp milk
  • 150g butter (softened)
  • 300g icing sugar
  • 1 tsp vanilla extract
  • 4 tbsp seedless raspberry jam
  • Powdered sugar, for dusting

Directions

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with cupcake cases.
  2. In a mixing bowl, cream together the softened butter and caster sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Sift the self-raising flour into the mixture and fold gently until just combined. Add the milk and mix until you achieve a smooth batter.
  5. Fill each cupcake case two-thirds full with the batter. Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove the cupcakes from the oven and transfer to a wire rack to cool completely.
  7. In a separate bowl, beat the softened butter until creamy. Gradually add the icing sugar and vanilla extract, beating well after each addition until you have a smooth buttercream.
  8. Once the cupcakes are completely cool, use a sharp knife to cut a circular piece out of the top of each cupcake, about two-thirds of the way down. Set the small cake circles aside.
  9. Fill a piping bag fitted with a star tip with the buttercream. Pipe a layer of buttercream onto each cupcake, starting from the outer edge and working your way inward.
  10. Add a dollop of raspberry jam into the center of each cupcake, on top of the buttercream.
  11. Cut the small cake circles in half to create butterfly wings. Place the wings on top of the buttercream and jam, pressing slightly to secure them in place.
  12. Dust the butterfly buns with powdered sugar for a finishing touch. Serve and enjoy!
