  • 4 slices of bacon, chopped
  • 1.5 pounds boneless, skinless chicken thighs
  • Salt and pepper to taste
  • 1 medium onion, chopped

  • 3 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 cup all-purpose flour

  • 1/2 cup milk
  • 2 tablespoons melted butter
  • 2 tablespoons chopped fresh parsley


  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set it aside on a paper towel-lined plate.
  2. Season the chicken thighs with salt and pepper. In the same pot with the bacon grease, brown the chicken thighs on both sides. Remove the chicken from the pot and set it aside.
  3. In the same pot, add the chopped onion, carrots, celery, and minced garlic. Cook until the vegetables are slightly tender, about 5 minutes.
  4. Return the cooked bacon and chicken thighs to the pot. Add the chicken broth, bay leaf, and dried thyme. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 30 minutes.
  5. While the soup is simmering, prepare the dumplings. In a mixing bowl, combine the flour, baking powder, and salt. Stir in the milk and melted butter until a soft dough forms.
  6. Once the soup has simmered for 30 minutes, drop spoonfuls of the dumpling dough into the pot. Cover the pot again and continue cooking for another 15-20 minutes, or until the dumplings are cooked through.
  7. Remove the bay leaf from the pot and discard. Stir in the chopped fresh parsley.
