Baba Ganoush is a traditional Middle Eastern dish made with roasted eggplants, tahini, garlic, lemon juice, and olive oil. This creamy and flavorful dip is perfect as an appetizer or spread. Serve it with warm pita bread or fresh vegetables for a delicious and healthy snack.

Ingredients

  • 2 medium eggplants
  • 2 cloves of garlic, minced
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Using a fork, prick the eggplants several times all over.
  3. Place the eggplants on a baking sheet and roast in the preheated oven for about 30 minutes or until they are soft and collapsed.
  4. Remove the eggplants from the oven and let them cool for a few minutes.
  5. Cut the eggplants in half lengthwise and scoop out the flesh into a bowl, discarding the skins.
  6. Using a fork or a food processor, mash the eggplant flesh until smooth.
  7. Add the minced garlic, tahini, lemon juice, olive oil, salt, and pepper to the mashed eggplants. Mix well to combine all the ingredients.
  8. Transfer the Baba Ganoush to a serving bowl and garnish with fresh parsley.
  9. Serve with warm pita bread or fresh vegetables.
