Ingredients

  • 1 1/2 cups all-purpose flour

  • 1/4 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh apricots, pitted and sliced
  • 1/4 cup apricot preserves
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the flour, granulated sugar, and salt. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of a 9-inch square baking dish. Bake for 15-20 minutes, or until lightly golden brown. Remove from the oven and let it cool.
