This delicious recipe is a perfect blend of flavors and textures, with the tanginess of the vinegar balancing the richness of the chicken. Ingredients

  • 3 lbs chicken pieces (legs and thighs)
  • 1 cup white vinegar
  • 2 cups water
  • 1 onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 tsp whole black peppercorns
  • 1 tsp dried oregano
  • 2 bay leaves
  • Salt, to taste
  • 2 tbsp olive oil for frying

Directions

  1. In a large pot, combine the chicken pieces, vinegar, water, onion, garlic, carrot, red bell pepper, green bell pepper, black peppercorns, oregano, bay leaves, and salt.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 45 minutes to 1 hour, or until the chicken is cooked through and tender.
  3. Using a slotted spoon, remove the chicken pieces from the pot and set them aside.
  4. In a separate frying pan, heat the olive oil over medium heat.
  5. Fry the chicken pieces in batches until they are golden brown and crispy on the outside.
  6. Remove the chicken from the pan and place them on a paper towel-lined plate to drain excess oil.
  7. Return the chicken pieces to the pot with the escabeche sauce, and simmer for an additional 10-15 minutes to allow the flavors to meld together.
  8. Serve the chicken escabeche warm or cold, garnished with fresh parsley or cilantro.
  9. Enjoy this tangy and flavorful dish!
