Ingredients

  • 4 medium-sized potatoes, peeled and cubed

  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Directions

  1. Heat oil in a large pan or kadai over medium heat.
  2. Add cumin seeds and mustard seeds. Let them crackle.
  3. Add chopped onion and sauté until golden brown.
  4. Add ginger-garlic paste and slit green chilies. Sauté for a minute.
  5. Add the pureed tomatoes and cook until the oil separates from the masala.
  6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  7. Add the cubed potatoes and coat them with the masala.
  8. Cover the pan and cook for 15-20 minutes or until the potatoes are tender, stirring occasionally.
  9. Once the potatoes are cooked, sprinkle garam masala and mix gently.
  10. Garnish with fresh coriander leaves.
