Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup mashed sweet potatoes (cooked and cooled)
- 1/2 cup milk
- 1/4 cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 large egg
- Oil for frying
- 1 cup powdered sugar (for coating)
Directions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix together the mashed sweet potatoes, milk, melted butter, vanilla extract, and egg until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes.
- Heat oil in a deep fryer or a large pot to 375°F (190°C).
- Remove the dough from the refrigerator and roll it out on a floured surface to a thickness of about 1/2 inch.
- Using a donut cutter, cut out donut shapes from the dough. If you don't have a donut cutter, you can use a round cookie cutter for the outer shape and a smaller round one for the inner hole.
- Carefully place the donuts into the hot oil, frying a few at a time. Cook for about 2-3 minutes per side until golden brown.
- Using a slotted spoon, transfer the cooked donuts to a plate lined with paper towels to drain excess oil.
- Allow the donuts to cool slightly. While still warm, coat them in powdered sugar by rolling them in a bowl of powdered sugar.
- Serve the sweet potato donuts warm and enjoy!
