This fresh strawberry cake is the perfect dessert for any occasion. Made with real strawberries, it has a light and fluffy texture that is sure to please. Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups fresh strawberries, hulled and pureed
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup fresh strawberries, hulled and finely chopped
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream together the granulated sugar and softened butter until light and fluffy.
  4. Add in the vanilla extract and eggs, one at a time, beating well after each addition.
  5. Alternate adding the dry ingredients and the milk to the butter mixture, starting and ending with the dry ingredients.
  6. Fold in the pureed strawberries until well incorporated.
  7. Divide the batter evenly between the prepared pans and smooth the tops with a spatula.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  10. In a mixing bowl, cream together the softened butter, cream cheese, and vanilla extract until smooth.
  11. Gradually add in the powdered sugar, mixing well after each addition.
  12. Fold in the finely chopped strawberries.
  13. Place one cake layer on a serving plate and spread a layer of the strawberry cream cheese frosting over the top.
  14. Place the second cake layer on top and frost the entire cake with the remaining frosting.
  15. Garnish with fresh strawberries, if desired.
  16. Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
