Directions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a small saucepan, combine the cranberries, granulated sugar, and water. Cook over medium heat until the cranberries burst and the mixture thickens slightly, about 10 minutes. Remove from heat and set aside to cool.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  4. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
