Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup melted butter
  • 1 ½ cups fresh strawberries, hulled and sliced
  • 3 envelopes unflavored gelatin
  • ¾ cup granulated sugar
  • ½ cup boiling water
  • ½ cup cold water
  • 1 cup whipped cream
  • ½ cup confectioners' sugar
  • 1 tsp vanilla extract

Directions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly onto the bottom and sides of a 9-inch pie dish. Refrigerate for 30 minutes to set.
  2. In a blender, puree the fresh strawberries until smooth. Set aside.
  3. In a large mixing bowl, combine the gelatin and granulated sugar. Pour boiling water over the mixture and stir until the gelatin and sugar are dissolved.
  4. Add the cold water and strawberry puree to the gelatin mixture. Stir until well combined.

  6. Gradually add the confectioners' sugar and vanilla extract to the whipped cream. Continue beating until stiff peaks form.
  7. Gently fold the whipped cream mixture into the strawberry gelatin mixture until well combined.
  8. Pour the strawberry chiffon filling into the prepared graham cracker crust. Smooth the top with a spatula.
  9. Refrigerate the pie for at least 4 hours or until set.
